Our story
Our story starts with a hazy early summers’ day. The backdrop is Puligny Montrachet, the commune responsible for producing some of the most prized white wines in all the world. With its gently sloping stoney terrior and row upon row of lush green vines, the air is still and the only sound is of chirping crickets and bees busy at their work.
We are three friends, wine lovers all, journeying in search of the fine wine that the Burgundy region is famed for. Our meandering path south through the province is punctuated by gentle conversation, laughter and long lunches. It is here that we discover for the first time...
Crémant.
Crémant is in effect champagne that isn’t from the champagne region. It seems that not content with crafting the world’s most prized cuvées by day, the wine makers of Burgundy blend Crémant as a past time, reserved for toasting at family celebrations with a few cases escaping to the choicest local restaurants.
It is here that we meet Aurélien, a 6th generation wine maker with a reputation for producing a quality of wines that have become the reference point for wine lovers and growers alike. Each autumn, Aurélien’s grapes are harvested exclusively by hand with only the richest and most complex first presses being retained. The resulting wine is aged in barrels on racks for between 12 and 18 months in his cellar, just the same way generations of his family have done for the past 124 years.
The result is Bõnnay, a fine sparkling Crémant de Bourgogne white wine that we present to you outside of France for the first time.
